Oven Sequence 7: The sugary pulpy mass of the cooked central stalk must be eaten quickly or dried and stored, otherwise it soon begins to ferment and spoils quickly. The cooked pulp is easily pounded—stone manos and metates, like the set shown here, do the trick, but wooden mortar and pestle were probably used more commonly in the Lower Pecos.
