Ripe American persimmons were apparently a mainstay for the Adais. Both French and Spanish accounts say that the Adais made –medlar” cakes, which they stored as winter food. In early fall, persimmons are very astringent, causing the mouth to pucker. But when fully ripe and after the first freeze they become sweet and tasty. Photograph by Frank Schambach.
